L'agrostologie, au sens le plus strict du mot, est une branche de la botanique qui a pour objet l'étude des graminées. Cependant, certaines définitions considèrent l'agrostologie comme une discipline qui étudie tous les aspects des problèmes théoriques et utilitaires posés par les graminées. Plus récemment encore, l'agrostologie est devenue la science des pâturages, science des herbages, science de l'affouragement. Pour l'agronome, l'agrostologie est une branche de la phytotechnie sensu lato : phytotechnie de l'«herbe» au sens que Whyte et ses collaborateurs donnent du mot «herbe», c'est-à-dire un mélange de base de graminées et de légumineuses constituant l'aliment du bétail.
