En Italie, hors-d'œuvre froid. Le terme associe au mot italien pasto, «repas», le préfixe latin ante, «avant». Un antipasto peut être constitué de jambon de Parme aux figues fraîches ou d'une fondue piémontaise (crudités accompagnées de condiments et d'une sauce au fromage fondu), mais il s'agit plus généralement d'un assortiment coloré et abondant, servi en guise d'amuse-gueule avec l'apéritif ou en début de repas, à la place des pâtes. Les antipasti sont alors accompagnés de gressins et rassemblent marinades de légumes et de poissons, fruits de mer citronnés, olives, charcuteries fines, salade de champignons, cœurs d'artichauts, etc., présentés en raviers.
