Il arrive parfois que, pendant plusieurs mois après l'embouteillage, le vin présente une amertume passagère qui va ensuite en s'atténuant. Cet accident sans gravité est désigné sous le nom de «maladie de la bouteille». L'amertume, ou âpreté, est due à une oxydation du vin pendant la mise en bouteilles; oxydation causée par le brassage de l'air.
