Il existe de nombreuses espèces de choux chinois, les deux principales étant le pé-tsai (Brassica pekinensis) et le pak-choi (Brassica chinensis). Le pé-tsai ressemble à la laitue romaine. Sa pomme atteint de 40 à 50 cm de longueur. Ses feuilles, irrégulièrement dentées, se prolongent jusqu'à la base du pétiole, qui est large et plat.
