L'emballage dans des feuilles de plastique peut modifier l'atmosphère autour des produits (emballage à atmosphère modifiée ou MAP en anglais). Le MAP limite généralement le mouvement de l'air ce qui permet aux processus normaux de respiration des produits fermiers de réduire le taux d'oxygène et d'élever le taux du gaz carbonique à l'intérieur de l'emballage. La réduction des pertes d'eau est un autre grand avantage de l'usage des feuilles de plastique.
