La plupart des opérateurs positionnés sur le tex-mex sont des indépendants ou plutôt ils gèrent à la manière des indépendants. On ne note aucune duplication significative sur le territoire national. À la différence d'autres restaurants à thème qui admettent une déviation vers quelques «valeurs-refuges» (steaks grillés, frites, filets de poisson, etc.), le tex-mex s'oriente vers un seul objectif : le dépaysement, l'exotisme. Dans beaucoup de plats mexicains, on retrouve la combinaison chaud et froid.
