Las cervezas de baja fermentación son las comúnmente llamadas "lager". Esa expresión proviene del alemán "lagerung", que significa "guardar en frío", y se refiere a las cervezas cuyo proceso de fermentación se da a baja temperatura-entre 5° C y 10° C-. Estas cervezas se caracterizan por ser espumosas y suaves, y puede encontrárselas rubias y morenas.
