Proteases act on proteins and break them down into smaller units. Some proteases are useful in breadmaking because they reduce mixing time and produce a more pliable, extensible dough with good handling properties. Sound flour has very little proteolytic activity. If required, proteases may be added in the form of malted cereal flours or various fungal protease preparations. Proteolytic enzymes require time to achieve their full effect on dough. In the sponge-and-dough process, protease is usually added to the sponge stage to give the enzyme more time to act and eliminate the inhibiting effect of salt which is added at the dough stage. 2, record 49, English, - proteolytic%20enzyme

2, record 49, French, - enzyme%20prot%C3%A9olytique

Allosteric enzymes function through reversible, noncovalent binding of a regulatory metabolite called a modulator. They have other shapes or conformations induced by the binding of modulators. An example is feedback inhibition. An allosteric effect is described as a variation in proteins activity through the interaction of another molecule at a site on the protein which is distinct from the "active" site. (Ex. Hb and BPG.) 2, record 63, English, - allosteric%20enzyme

Immobilization can result in significant changes in the properties of enzymes in comparison with the properties of the soluble enzyme. It is likely that the properties of the immobilized enzyme are nearer to the in vivo properties since dilute soluble enzyme studies normally ignore the complex realities of the intracellular environment. Immobilized enzyme systems can simulate some of these realities, e.g. generation of localized microenvironment, diffusional restrictions, partitioning of substrates, products, coenzymes, etc. ... Several workers have observed that the close proximity of the immobilized enzyme to its support matrix is a major contributing factor to changes in the properties of enzymes when they are immobilized. 2, record 79, English, - soluble%20enzyme

Regulatory enzymes occupy key positions in metabolic pathways. The structural elements needed to make a regulatory enzyme are used with great selectivity and imposed only on those enzymes with which it will result in the maximum economy of the cell's resources. An understanding of a particular multienzyme pathway usually suggests which enzymes might make attractive candidates for regulation. For example, many biosynthetic pathways involve a long chain of single chemical steps, each carried out by a discrete enzyme. ... It is obviously most economical for the first enzyme of the pathway to be inhibited once sufficient end product is present. 3, record 80, English, - regulatory%20enzyme

Immobilization of enzymes by crystallization and subsequent cross-linking provides structures which have a regular three-dimensional molecular arrangement, and a high packing density. Such structures are useful for both X-ray diffraction analysis, and also physico-chemical studies of enzymes in the solid state. An important feature of the enzyme crystals is that they have large liquid-filled channels surrounding the individual protein molecules, therefore, as in dilute solution, most of the surface of the enzyme is in contact with the surrounding solvent. Since the channels are permeable to low molecular weight solutes, it is possible to study the properties of enzymes in crystals in much the same way as when in solution. Lysosyme is an ... enzyme whose catalytic mechanism is being studied. X-ray analysis of the crystalline enzyme shows that it contains a long cleft as its active site, which can accommodate its normal substrate, the long-chain peptidoglycan of bacterial cell walls. 3, record 98, English, - crystalline%20enzyme

3, record 98, French, - enzyme%20cristallis%C3%A9e
