The sponge and dough method is employed primarily by wholesale bakeries ... In this method a sponge consisting of part of the flour (usually 65 to 70% of the total flour) is mixed first. All the yeast, all the mineral yeast food, and enough water to make a stiff mixture are incorporated in the sponge, which is then fermented for about four to five hours. The sponge is returned to the mixer, where the rest of the flour, water, and all additional ingredients are added and mixed to proper development ... After mixing is completed, the dough is fermented for about 20 minutes. 1, record 3, English, - sponge%20and%20dough%20method

2, record 24, French, - fermentation%20en%20continu

The Continuous Bread Making System uses the following basic elements: A liquid ferment, brew or liquid sponge is prepared and allowed to ferment in stainless steel tanks under controlled temperature conditions for several hours. The fermented mixtures are cooled by the use of refrigerated coils between the walls of the tanks until ready to be used. This process eliminates setting individual sponges and dough’s, and the need for dough troughs and large fermentation rooms — a method of bringing together continuously all the ingredients in the right proportion for the dough. 1, record 25, English, - liquid%20ferment

Air curing requires an open framework in which sticks of leaves (or whole plants) are hung, protected from wind and sun. Fire curing employs an enclosed barn similar to that used for flue curing. Small fires are built on the floor, and the leaves cure in a smoke-laden atmosphere. [...] 2. La fermentation méthanique. 4, record 66, French, - fermentation%20a%C3%A9robie
