La leche cruda certificada, según establece el [Reglamento Sanitario de Alimentos y Bebidas], es aquella cuyos caracteres de pureza fueron establecidos desde su obtención hasta su entrega al consumidor, mediante la higiene más estricta, conservando una refrigeración constante a partir de su ordeñe de no más de 10ºC. El número de bacterias no debe exceder los 10. 000 por mililitro. Debe estar libre de coliformes. Tiene que cumplir requisitos como envasado en botellas esterilizadas, precintado con hora y fecha de envase y transporte en vehículos limpios, con cajas refrigeradas.
