L'Initiative d'assurance de la salubrité des aliments est le troisième volet du PCSQA. Elle favorise les projets régionaux et provinciaux et est fondée sur la mise au point de systèmes. Annoncé en décembre 2003, ce volet permet à l'industrie, grâce aux fonds accordés, de mettre au point des systèmes d'assurance de la salubrité et de la qualité des aliments, ainsi que des systèmes de traçabilité.
