Casi todos conocen las dos principales clases de trigo —trigo harinero y trigo duro— pero pocos saben que el trigo también tiene tres hábitos diferentes de cultivo : primavera, invierno y facultativo. El hábito de crecimiento de una variedad limita su supervivencia a ciertas zonas geográficas, definidas principalmente por la latitud. Los trigos con hábito de primavera tienen un ciclo continuo de crecimiento, sin período de inactividad. En las zonas donde los inviernos son severos, como el norte de Kazajstán o Canadá, se siembra el trigo en primavera cuando ya no hay peligro de heladas. En las zonas con inviernos muy moderados, como la India o Australia, se siembra el trigo de primavera en otoño y el cereal crece durante el invierno.
