On en trouve dans les feuilles de chou rouge, de vigne vierge, les pétales de rose, de pétunia, de mauve, d'hortensia, dans certains fruits : raisins, oranges sanguines, fraises. Solubles dans l'eau, ces pigments sont localisés dans les vacuoles des cellules. Il virent du rouge au bleu suivant que le suc vacuolaire est acide ou basique. Ce sont des hétérosides des anthocyanidines.
