L'inuline remplace l'amidon comme nourriture de réserve chez certaines composées; elle en diffère par la présence d'un enchaînement de molécules de fructose, au lieu de glucose dans l'amidon; le fructose est libéré lors de l'hydrolyse acide ou enzymatique de l'inuline [...] L'inuline est éliminée au niveau rénal par simple filtration glomérulaire, sans réabsorption ni excrétion tubulaire.
