L'appellation «légume racine» regroupe de nombreux légumes, de familles et d'apparences différentes. «Botaniquement» parlant, elle concerne également des organes différents. La racine stricto sensu, est la partie souterraine de la plante qui la maintient au sol et qui l'alimente en eau et en sels minéraux. Mais ce n'est pas le seul organe que l'on trouve sous terre : en effet, les rhizomes ne sont pas des racines, mais des tiges souterraines. Toute racine ou tout rhizome ne se consomme pas. Pour être considérés comme légumes, il faut qu'ils soient «tubérisés», c'est à dire transformés en tubercules. Un tubercule est un organe stockant des aliments de réserve. Il se trouve ainsi «gonflé» par ces derniers.
