Dans tous les pays du Moyen-Orient et en particulier en Syrie, au Lyban, en Turquie et en Égypte, le "boulghour" sert de base depuis des siècles au régime alimentaire. Cette ancienne forme d’aliment céréalier est connu sous divers noms : bulgar, boulghour, burgul et burghoul. La méthode traditionnelle de préparation de cet aliment consiste à faire bouillir du blé entier dans des récipients découverts jusqu'à son attendrissement, puis à l'étendre en couche mince pour le faire sécher au soleil. Les couches externes grossières du son sont enlevées et le grain est ensuite concassé par humectage et brassage manuel, ou avec une pierre ou une meule grossière. Le produit obtenu peut alors être conservé, prêt à l'emploi. Pour la consommation, il suffit de le chauffer de 15 à 20 minutes à l'eau ou à la vapeur.
