Fischer à la théorie selon laquelle l'enzyme est une clé qui n’ ouvre qu'une seule porte. En fait, ceci est loin d’être exact. Il existe effectivement des enzymes à très haute spécificité : l'arginase coupe l'arginine en ornithine et urée, l'uréase transforme l'urée en carbonate d’ammonium. Par contre les lipases hydrolysent tous les triglycérides dont les acides gras sont longs, les estérases hydrolysent un grand nombre d’esters. Renin is synthesized in a larger form (prorenin or big renin) and converted to its enzymatically active form, being released into the blood in response to decreased plasma volumes, sodium depletion, fluid transudation, decreased arterial pressure, hemorrhage, and increased potassium.
