The syrup from the crystal washing, called affination syrup, is transferred to a remelt processing station or reused in the raw sugar washing step. In the remelt station, the syrup volume is reduced to form the massecuite, and the sugar crystals are separated from the syrup. Une fois que les cristaux ont atteint la taille et la quantité désirées, le mélange(masse cuite) passe dans des essoreuses afin de séparer les cristaux de l'eau encore présente. Cette eau ou égout pauvre repart au niveau des phases d’évaporation et de cristallisation pour un deuxième voire un troisième traitement. Les cristaux obtenus sont lavés par pulvérisation d’eau(clairçage). L'eau obtenue après clairçage est également appelée égout riche.
