During the late middle ages as grapes ripened in the vineyards of Burgundy a quick harvest was needed and the noontime meal was often skipped. Johann du Putzxe was a monk who made a kind of fast food by dunking pieces of meat into hot oil. The Swiss later adapted this as a variety of fondue. The pot is filled with oil (or butter) and brought to simmer. Each person spears small cubes of beef or horse meat with a long, narrow fondue fork and fries them in the pot. An assortment of sauces and sometimes a further cheese fondue are provided for dipping. 5, record 13, English, - bourguignonne%20fondue

1, record 36, Spanish, - aceite%20de%20mostaza%20negra

Glucosinolates are extracted from ground full-fat canola seed using boiling water. The aqueous extract is passed through weak anion exchange resin, which binds glucosinolates. Myrosinase is applied. Hydrolyzed glucose eluted from the column is analysed and quantified by a glucose oxidase/peroxidase assay. The general practice in Canada is to use only one cleaning passage for the blend. The first cleaning machine is a milling separator, similar to the receiving separator used in the elevator, but more precise in its ability to separate impurities that are larger and smaller than wheat. The top sieve has large perforations about six millimetres in diameter and the bottom sieve has holes two millimetres in diameter. As the grain passes through the machine, large impurities such as corn, soybeans and unthreshed wheat are removed by the top screen, while the finer bottom sieve allows small impurities such as mustard seed, buckwheat and sand to pass through for separate collection. The partially cleaned wheat tails over the finer sieve. As it falls off the end of the sieve, it is aspirated by air currents that remove chaff and dust to a separate outlet. 1, record 65, English, - milling%20separator

1, record 65, French, - s%C3%A9parateur%20de%20mouture

Stones (in all grains) include hard shale, coal, hard earth pellets, hard fertilizer pellets (except when found in domestic mustard seed) or other non-toxic materials of similar consistency. Any such material that is readily removable by ordinary cleaning methods is assessed as dockage. If a No. 6 buckwheat sieve or a No. 316 slotted sieve is used for special cleaning, the material removed may be assessed as dockage (see "Special cleaning" in the dockage assessment sections for each grain in this Guide). Grade tolerances established in this Guide are for material classed as stones which is not separable. Tolerances are normally expressed in number of stones per 500 grams. When this is not practical, stones are expressed as a percentage by weight. 1, record 73, English, - stones

1, record 73, French, - pierres
