La structure des acides aminés conditionne le repliement des protéines. Dans un acide aminé isolé, quatre groupes chimiques sont liés à un atome de carbone central, le carbone alpha; ces groupes sont un groupe amine NH2, un groupe carboxyle (COOH), un atome d’hydrogène et une chaîne latérale (notée R). Les 20 acides aminés ne diffèrent que par leur chaîne latérale. Dans une protéine, le groupe aminé d’un acide aminé est lié au groupe carboxyle de l’acide aminé suivant (avec élimination d’une molécule d’eau), formant ainsi une liaison peptidique.
