Proteolytic enzymes and chemical reagents are available that will cleave proteins between specific amino acid residues. The enzyme trypsin, for instance, cuts on the carboxyl side of lysine or arginine residues, whereas the chemical cyanogen bromide cuts peptide bonds next to methionine residues.
