Il existe des centaines de sortes d’huîtres. Elles appartiennent à la famille des Ostréidés et sont réparties dans deux grands groupes : les Ostrea plates et les Crassostrea creuses. La très forte hygroscopicité de certains sels comme le chlorure de calcium est utilisée pour maintenir l'air sec, dans des enceintes. On se sert également du fait que la solution saturée en tel sel est en équilibre avec une humidité relative particulière pour maintenir dans des enceintes l'humidité relative constante.
