Dans la pratique, les règlements des aliments et drogues, au dire du Bureau des traductions, emploient les termes extract, essence et flavour comme synonymes. Comme il n’ est pas toujours facile d’aller en laboratoire vérifier le mode de fabrication du produit, le comité de terminologie des épices propose de conserver la synonymie des deux premiers termes avec la réserve que, comme un extrait ou une essence ne peuvent être artificiels, l'expression artificial extract(ou essence) soit traduite par arôme artificiel. Selon la réglementation en vigueur en France, le mot essence est synonyme d’huile essentielle. Il est également utilisé pour désigner des dérivés des huiles essentielles(essence alcoolique, essence soluble), mais est réservé uniquement aux produits naturels. L'essence n’ est tirée que d’une partie de l'aromate : par exemple, l'huile essentielle d’orange provient du zeste. En revanche, le terme extrait est plus général; il s’applique au produit qui contient la totalité des éléments aromatiques de l'aromate, ainsi l'extrait d’orange est tiré du fruit entier.
