In general, Italian breads are characterized by a rather thick and dry crust. ... Pannetone is a very rich festival bread containing high amounts of fat, egg and fruit. Panettone has a characteristic yellow crumb, soft silky texture and extremely long shelf life. This dough is given a long slow fermentation and is made up into dome shaped loaves (cupola) following the addition of fruits and flavours. 1, record 1, English, - panettone

1, record 1, French, - panettone

A large scale of organic wastes from intensive production of livestock and city refuse have resulted in major environmental problems. So more attention has been paid to solve the problem by developing a series of manufacturing processing techniques. Alone with it a number of waste treatment plants have been established in persent years. Such composting factory equipped with rotary fermentation tower to make the process aerobically. Some bakers have adopted the use of flours treated with special reducing agents to eliminate part of the long fermentation required in conventional breadmaking processes. Cysteine, a naturally occurring amino acid with reducting properties, and relatively high levels of potassium bromate are included in the flours used in the "no-time" process. This combination of ingredients eliminates the need for bulk fermentation of the dough and saves the baker space and time. 1, record 8, English, - no%2Dtime%20process

1, record 8, French, - proc%C3%A9d%C3%A9%20%C3%A0%20fermentation%20rapide
