The cheese probably derives its name from the unusual shape as it resembles a dolphin or fish. It is made with a Maroilles cheese flavored with parsley, tarragon and pepper. The pâte is very soft and slightly sticky. This cheese has a spicy flavor with a yeasty aroma. It ripens in two to four months and has a fat content of 45 per cent. 1, record 15, English, - Dauphin

It is classed among the greatest French cheeses and even protected by the strict Appellation Controlee laws to prevent frauds. Crottin de Chavignol is a small cheese, weighing between 5 and 2 oz, depending on the age. The cheese starts as a very white cheese and then turns yellow with a light blue mold and eventually brown (which is rarely seen in this country). As the cheese ages, it becomes increasingly sharp and pungent. Even when young though, it does not lack flavor. 2, record 16, English, - Crottin%20de%20Chavignol

2, record 16, French, - Crottin%20de%20Chavignol

Until the 19th century, this wonderful melting cheese was known as the Valais. ... The cheese was traditionally cut in half and placed on the cut surface facing the fire. As the cheese started to bubble, it would be scraped on to boiled potatoes to make a delectable treat. Raclette is very supple. The pale golden interior has a sweet, at the taste and a pleasant, citrus tang that deepens with a savoury bite. When heated, the cheese bubbles, melts and intensifies in flavour. Also known as Bagnes or Conches, Fromage a Raclette (or simply Raclette) is available in both raw and pasteurised versions. It ripens in three to four months and has fat content of 45 per cent. 2, record 17, English, - Fromage%20a%20raclette

The Broccio comes in the form of a ball of curd that has been flattened and presented in a returnable wicker basket, known as "les canestres", which varies in sizes. Broccio is usually eaten fresh, within forty eight hours, but if drained and salted it can be ripened like other cheeses. The ripening of this cheese represent about 15 % of the total production. It is an unusual cheese in that it is made from lactoserum, that is the whey that is recuperated after cheese making. One needs 11 liters of milk to obtain the lactoserum to produce a kilo of Broccio. 2, record 19, English, - Broccio

4, record 19, French, - Broccio
