Au début des années 1900, les cultures microbiennes mises à la disposition des fromagers étaient liquides et non réfrigérées. Le procédé fonctionnait donc en hiver mais pas en été car une suracidification se produisait alors et faisait perdre au ferment toute activité fermentative. Par la suite, on déshydrata les ferments pour augmenter leur durée de conservation mais le taux de survie des cellules à ce traitement était faible.
