1, record 10, French, - produit%20laitier%20ferment%C3%A9

The principle of cheesemaking involves the coagulation of milk protein followed by the separation of the resultant curds and whey (solid and liquid). Much more is now known of the science of cheesemaking, but the process remains very much a skill and a craft. Recipes are available for many varieties but the skill of the cheesemaker remains paramount. Changes in the milk, the seasons, how the cultures behave during the making process, all these, as well as the actual maturing process, affect the end results. 2, record 11, English, - cheesemaking

3, record 11, French, - fabrication%20du%20fromage

The slightly flared glass is most suited to the young "acidic" white wines such as Riesling, Grüner Veltiner and Sylvaner. The presence of natural carbonic acid produces the overly acidic taste which is compensated for by the flared rim of the glass which helps to deposit the wine on the tip of the tongue where it is least sensitive to acids. 2, record 12, English, - natural%20carbonic%20acid

In the late 1970's, a group of molecules called 'conjugated linoleic acids' (CLA) were found to prevent selected cancers. They are fatty acids, are quite similar in structure, and are derived biologically from a very common fatty acid, linoleic acid. The CLA family can also be synthesized in the laboratory from vegetable oils, offering an opportunity for increased utilization of agricultural lipids. It is now known that the effects of dietary CLA include not only cancer prevention but also prevention of Type 2 diabetes, reduced fat production with increased muscle production, and decreased atherosclerosis. 1, record 14, English, - conjugated%20linoleic%20acid
