Cette substance riche en protéine est produite dans le jabot des pigeons et tourterelles mâles et femelles à partir de la desquamation des cellules épithéliales externes des parois latérales de cet organe. Les cellules épithéliales du jabot s’hypertrophient et deviennent riches en lipides sous l'influence de l'hormone prolactine qui est sécrétée par l'adénohypophyse. Les deux parents nourrissent leurs petits en régurgitant le «lait», lequel constitue essentiellement la seule nourriture du pigeonneau pendant les quelques premiers jours après sa naissance.
