Milling. For efficient extraction with water, malt must be milled. Early milling processes used stones driven manually or by water or animal power, but modern brewing uses mechanically driven roller mills. The design of the mill and the gap between the rolls are important in obtaining the correct reduction in size of the malt. The object is to retain the husk relatively intact while breaking up the brittle, modified starch into particles. 2, record 7, English, - malt%20milling

This famous wheat, commonly known as Red Fife or Scotch Fife in North America, is called "red" because that is its colour when fully ripe and "Fife" after David Fife, the Ontario farmer who was the first to grow it in North America when he sowed it on his farm in 1842. The story of how it got there has taken on aspects of myth and legend. It takes place at various locations across two continents: one often needs to look ahead in time, then back, to understand how it happened. 1, record 8, French, - bl%C3%A9%20Red%20Fife

From the milling separator, the grain passes to a gravity separator. The grain moves down the sloping screen to the outlet while the stones are propelled toward the head of the screen by the oscillating movement, and collected separately. Although only a very small percentage of stones may be present, their removal is important since they cause extensive damage to processing machinery. Whether washing is used or not, the wheat must be brought to a specific moisture content to prepare it for milling. This is achieved by several cycles of wetting and resting. In milling technology this is called tempering. The wetting is carried out in a damping conveyor where a controlled amount of water is sprayed on the moving wheat as it is conveyed slowly to the tempering bin where the wheat is allowed to rest for a predetermined period. Following the first tempering, the wheat may go through a second tempering cycle. A two stage tempering system is preferred over a single stage, since there are occasions when the moisture content of the grain must be increased by as much as 6.0%. It is much easier to make this addition in two stages, separated by a rest period, to allow for proper distribution of moisture in the wheat kernel. Tempering the wheat to a proper moisture content is an essential part of the milling process. Optimal tempering toughens the bran and thereby facilitates its separation from the endosperm without extensive powdering. It also mellows the endosperm and this facilitates its reduction without excessive starch damage. 1, record 18, English, - wetting

1, record 18, French, - humidification

The general practice in Canada is to use only one cleaning passage for the blend. The first cleaning machine is a milling separator, similar to the receiving separator used in the elevator, but more precise in its ability to separate impurities that are larger and smaller than wheat. The top sieve has large perforations about six millimetres in diameter and the bottom sieve has holes two millimetres in diameter. As the grain passes through the machine, large impurities such as corn, soybeans and unthreshed wheat are removed by the top screen, while the finer bottom sieve allows small impurities such as mustard seed, buckwheat and sand to pass through for separate collection. The partially cleaned wheat tails over the finer sieve. As it falls off the end of the sieve, it is aspirated by air currents that remove chaff and dust to a separate outlet. 1, record 22, English, - milling%20separator

1, record 25, French, - syst%C3%A8me%20de%20transporteurs%20automatiques

A double tempering system is preferable for conditioning prior to milling. Unlike hard red spring wheats, the time required to bring sound, good quality durum to optimum milling condition is only five to six hours. Longer periods cause pigment changes resulting in loss of colour in the semolina and the pasta end product. It should be emphasized, however, that this tempering time may vary depending on the quality of durum wheat. A poor grade containing a high percentage of white grains absorbs moisture quickly and may require no more than three hours tempering time. Durum wheat is usually milled at a moisture content of approximately 16% to yield semolina at 14% moisture content. 1, record 38, English, - double%20tempering%20system

1, record 38, French, - syst%C3%A8me%20%C3%A0%20double%20conditionnement

Wheat pre-processing is a recently developed technology which gradually removes the outer layers of wheat before conventional milling. The advantages of debranning before milling are (i) lower capital investment, (ii) increased capacity and (iii) improved flour quality. However, wheat bran, the by-products of the debranning process, are generally sold as feed with little value-added application. 1, record 44, French, - pilon

The cleaned and tempered wheat is now subjected to a series of grinding operations, of which the first five or six sets of rolls exert a crushing and shearing action. Known as the break system and designed primarily to bring about a far-reaching separation of the tough bran from the friable endosperm, this part of the grinding process is carried out on corrugated iron rolls, called break rolls, which revolve in opposite directions at different speeds. Each successive set of rolls takes the stock from the preceding one, after proper separation, so that they operate serially rather than in parallel. Proceeding from the first to the fifth or sixth break, the corrugations on the rolls become finer and the setting of the rolls progressively closer. 1, record 45, English, - break%20roll

The term "break roll" is used to designate a "break rollermill" itself and the plural often designates an entire group of break rollermills. This is due to the fact that the heart of any rollermill is one or more pairs of cast-iron rolls. 3, record 45, English, - break%20roll

4, record 45, French, - broyeur%20%C3%A0%20cylindres
