Philippe Candelon, dans son livre «Les machines agricoles» (tome 2, page 168) explique que les épis de maïs (quelquefois appelés «panouilles») comportent un axe central volumineux appelé rafle qui supporte les grains. Le tout est recouvert par une série de grandes bractées foliacées : les spathes. Dépouiller ou dépanouiller signifie débarrasser les épis de leurs spathes.
