Des flétans du Groenland entiers ou en filets sont placés en vrac dans des glacières à l'air ou sous atmosphère de 25% CO2-75 % N2 puis entreposés à 0 plus ou moins 1 degré C pendant 20 jours. Les résultats des analyses microbiologiques, le taux d'azote basique volatil total et les évaluations organoleptiques ont démontré que le flétan entier sous atmosphère modifiée se conserve plus de 15 jours. Les pertes par exsudation des flétans entiers sous ce mélange de gaz sont aussi minimisées.
