The truth of the matter is that the glutamic acid found in unprocessed, unadulterated food and in the human body is composed of one form of a single amino acid, L-glutamic acid, and nothing else. In contrast, the processed free glutamic acid used in processed food is always composed of two forms of glutamic acid (L-glutamic acid and D-glutamic acid) and a variety of other chemicals commonly referred to as contaminants.

Les ponts interpeptidiques unissent l'un des groupes carboxyles du deuxième acide aminé (acide aminé «acide», généralement l'acide D-glutamique) d'une unité tétrapeptidique au groupe carboxyle du quatrième acide aminé (la D-alanine) d'une autre unité tétrapeptidique.

Le peptidoglycane ou muréine est un polymère formé de molécules de N-acétyl-D glucosamine et d'acide N-acétyl-muramique sur lesquelles se fixe une chaîne peptidique comportant cinq acides aminés qui sont la L-alanine, l'acide D-glutamique, la L-lysine et deux D-alanine. Sur la lysine se fixe la pentaglycine.

acide D-glutamique : Voir aussi «acide L-glutamique», qui correspond à l'acide glutamique tel que présent dans sa forme naturelle. Les lettres «D» et «L» sont des petites majuscules.
