La sève brute est composée en grande partie d'eau et de substances minérales, puisées dans le sol au niveau des poils absorbants de la racine. L'élévation de la sève brute dans la tige est due à plusieurs causes : l'absorption osmotique de l'eau du sol par les extrémités radicellaires, provoquant une poussée radiculaire; la capillarité des vaisseaux; la transpiration au niveau des feuilles, déterminant l'apparition de forces de cohésion considérables.
