OBS

Les sucres à cinq atomes de carbone (pentoses) peuvent parfois être fermentés et donnent alors une molécule d'éthanol et une molécule d'acide lactique. Outre ces produits, qui représentent plus de 80 p. 100 des sucres utilisés, on obtient également de l'acide acétique et du glycérol.
