Le fumage-séchage qui dure plusieurs heures selon le type de four. La température du produit sur la claie varie généralement entre 57 et 100 °C. On procède à 2 à 3 retournements de claie. Une forte déshydratation du produit final est obtenue à la fin de cette phase et lui confère une bonne aptitude à la conservation.
