On considère qu'il existe 3 types de gelées : Les gelées par advections ou gelées noires ou gelées de plein vent. Elles sont produites par l'arrivée d'une importante masse d'air froid d'origine polaire. Les gelées blanches ou gelées par rayonnement. Elles se produisent surtout pendant certaines nuits claires de février ou mars et même éventuellement jusqu`au début mai et occasionnent de gros dégâts sur la floraison. [...] Les gelées par évaporation. Ce sont les plus rares, quoique très spectaculaires. Elles peuvent survenir lorsque l'air est très sec et si l'on note la présence d'une pellicule d'eau sur le feuillage, le gel peut alors apparaître en quelques minutes à la surface de la feuille alors que les températures extérieures sont supérieures à 0 °C.
