Le génie alimentaire est par essence une discipline pluridisciplinaire qui fait largement appel : - à des notions de physique et de chimie dans la mesure où la connaissance du produit et de son évolution lors des diverses opérations de transformation, constitue la base de la compréhension de la technologie; - à des notions de microbiologie, notions qui sont primordiales à tous les niveaux de la filière agroalimentaire : de la matière première jusqu'à la distribution, en passant par toutes les opérations de transformation, de stabilisation, d'entreposage et de commercialisation afin d'assurer aux consommateurs la «sécurité alimentaire»; - à des notions de Génie industriel.
