In affluent countries over 40 percent of the dietary carbohydrate is furnished by sucrose and other refined sugars, mostly glucose and fructose, and the remainder by the polysaccharide starch. In less affluent countries, starch furnishes nearly all the carbohydrate intake, and very little sucrose is consumed.
