La glycosylation correspond à un ajout d'oligosaccharides (polymères constitués d'un petit nombre de glucides simples ou -oses) au cours de la biosynthèse de certaines protéines membranaires ou sécrétées, qui de fait deviennent des glycoprotéines. Cet ajout se fait par voie enzymatique et en plusieurs étapes dans le réticulum endoplasmique et l'appareil de Golgi des cellules eucaryotes.
