Un très grand nombre de substances (terre, matières organiques et alimentaires, ciment et surtout certains sels) présentent une hygroscopicité plus ou moins marquée. À toute humidité relative de l'air correspond un potentiel en équilibre de l'eau absorbée par le corps et par conséquent une certaine teneur en eau. Si l'équilibre d'humidité entre l'air et la substance est réalisé, toute augmentation de l'humidité relative de l'air entraîne une augmentation de teneur en eau du corps et inversement. La très forte hygroscopicité de certains sels comme le chlorure de calcium est utilisée pour maintenir l'air sec, dans des enceintes. On se sert également du fait que la solution saturée en tel sel est en équilibre avec une humidité relative particulière pour maintenir dans des enceintes l'humidité relative constante.
