Fresh konjac is a type of tuber, similar to yam and taro, but oval in shape. The content of the main constituent, glucomannan, reaches its highest level after 3 years of growth.

Le konjac est une plante d'Asie dont les tubercules sont utilisées afin de recueillir une fibre végétale appelée le glucomannane.

Le konjac est en fait un tubercule, et l'on extrait de ce tubercule une substance à la propriété étonnante ; en effet le glucomanane a la capacité d'absorber pas moins de 100 fois son volume d'eau, ce qui lui confère le pouvoir de former un gel volumineux et de grande viscosité dans l'estomac. Le gel que forme le konjac dans l'estomac n'est en aucun cas assimilé par l'organisme et n'apporte donc pas de calories.
