La leche concentrada es la leche de vaca pasterizada y privada de una mayor proporción de su agua de constitución que la evaporada. En el primer caso es necesaria la esterilización, ya que el grado de concentración es bajo (de alrededor del 26-30%) y puede haber desarrollo microbiano.
