Skin-fermented or skin-contact white wines are white wines that have had extended contact with grape skins. This is unique, because typically, white wines do not spend time on their skins during fermentation. When white wine grapes are pressed, only the juice is fermented. Whereas, when red wines and rosés are fermented and pressed, they spend time on the skins (much less time for rosés than for reds). This extended skin contact is what gives wines their color and tannin. [They are] often known as "orange wines" due to their color ... 8, record 1, English, - orange%20wine

Some orange wines are indeed orange, but some can be pale pink or deep amber. This comes down to the grape variety and the amount of time the juice spent with the skins. 9, record 1, English, - orange%20wine

6, record 1, French, - vin%20orange

Cleaned corn grain is washed thoroughly and then steeped for 36 to 40 hours in approximately twice its volume of water containing 0.2% SO2 at a temperature of 46-50 [degrees]C. As the steep water is drawn from the corn it contains between 6 and 9 lbs of solids per 100 lbs of water. The corn should be soft to the touch, but must not be slimy or smeary - in the latter case it was steeped either too hot or too long. The steep liquor is then evaporated [under 25 mm Hg pressure] in a "Swenson" evaporator to what is called heavy steep liquor with a gravity of 16 to 20 [degrees] Bé and containing 50-60% of solids. In this form it is sold to manufacturer of antibiotics who may have their own specifications as to age, gravity and SO2 content. 4, record 3, English, - corn%20steep%20liquor

1, record 3, French, - eau%20de%20mac%C3%A9ration%20du%20ma%C3%AFs
