Le rumen est le plus volumineux des quatre compartiments de l'estomac du polygastrique. C’est un milieu de travail extrêmement favorable au développement de la flore microbienne qui y réside. L'animal hôte de ces importantes colonies de microorganismes tire avantage de leur présence. C'est en quelque sorte un échange de services : le ruminant offre un milieu de vie propice et des aliments aux microorganismes alors que ces derniers dégradent et synthétisent les nutriments sous des formes beaucoup plus assimilables. [...] Le travail des microorganismes du rumen consiste, dans une première étape, à dégrader les nutriments ingérés par l'animal.
