Avec les techniques d'analyse chimique et bactériologique, on a pu progressivement chiffrer des seuils à ne pas dépasser (pour la santé) et les niveaux souhaitables à atteindre (pour le confort), pour un nombre croissant de substances; à la suite d'une forte accélération des études épidémiologiques, les normes quantitatives se sont multipliées depuis la IIe Guerre mondiale : aujourd'hui le nombre de paramètres atteint 62 en Europe et dépasse 80 aux États-Unis.
