Clarification du jus de pommes. Le procédé traditionnel de production de jus de pommes clarifié nécessitait l'emploi d'agents de collage (gélatine, bentonite), avec de longues durées de décantation (24 à 48 h) parfois non maîtrisables et d'adjuvants de filtration (Kieselguhr). Aujourd'hui toutes les unités ont adopté la filtration tangentielle (microfiltration ou ultrafiltration) pour clarifier le jus de pommes.

Canadian Food Inspection Agency. The objective of this Code of Practice is to define "Good Agricultural and Manufacturing Practices" to promote the production and sale in Canada of unpasteurized fruit juice/cider that is safe and of the highest quality. It sets out recommendations for growing, harvesting, transporting, storing, processing, packaging and distributing. Its aim is preventing the contamination of juice/cider by pathogenic microorganisms such as E. coli O157:H7.

Apple cider ... is the name used in the United States and parts of Canada for an unfiltered, unsweetened, non-alcoholic drink made from apples. It is opalescent, or opaque, due to the fine apple particles in suspension, and may be tangier than conventional filtered apple juice, depending on the apples used.

OBS

In most part of the world, "cider" refers to the beverage made from fermented apple juice. In North America, "cider" usually refers to an unfermented drink made from apple juice.
