La sacarosa -comúnmente llamada azúcar de mesa- es un disacárido formado por glucosa y fructosa, que proporciona cuatro calorías por gramo o aproximadamente 16 calorías por cucharada de té. La sacarosa se obtiene de la caña de azúcar o de la remolacha azucarera. El proceso de refinación remueve las impurezas de la caña de azúcar y produce los cristales blancos que conocemos con el nombre de azúcar.

La sacarosa o sucrosa, conocida como azúcar de mesa, se obtiene por medio de la trituración y extracción de la caña de azúcar con agua o extraída del azúcar de remolacha (beta vulgaris) con agua, evaporando y purificando con cal, carbono y varios líquidos.

La sacarosa es soluble en el agua, poco soluble en el alcohol e insoluble en el éter.
