L'équipe de Werner Lindiger, de l'université d'Innsbruck, a mesuré les composés organiques volatils de l'ail présents dans l'haleine des consommateurs. Après quelques heures, les niveaux de substances à forte odeur, comme les sulphides et disulphides, qui sont aussi dégagés par de l'ail fraîchement écrasé, chutent. En revanche, trois substances, l'allyl-méthyl-sulphide, le diméthyl-sulphide et l'acétone, étaient encore présentes trente heures après à des taux très importants (1 000 fois plus pour l'acétone).
